Château Prieuré de Bubas nestles at the foot of the Alaric Mountain at the heart of windswept Corbières country. The mountain overlooking the vineyard provides much-needed shade, as the grapes reach maturity towards the end of the summer, in this very hot and arid region. One of the peculiarities of the vineyard is that Olivier Durand-Roger produces just two wines, both red, from his 35 hectares of Carignan, Grenache and Syrah vines. For his classic red, Château Bubas, Olivier uses the technique of carbonic maceration to extract maximum flavour and aroma from the grapes. His high-end wine - Clos Bubas - is made from the oldest vines on the estate and is raised in 400-litre oak barrels for two winters. Production of the Clos Bubas is limited to just 1,500 bottles every year. Bubas, AOC Corbieres
